50 G Rocket
2 Gren Rosemary
20 G Sea salt

2 Gren Thyme
2 Spiseskje Tomato purée
250 G Tomato sauce

Peel the sweet potatoes, cut into wedges and soak in cold water for approx. 1 hr.

Peel the garlic and shallots and roughly chop together with the dates.
Dice the bacon and fry in a pan with the thyme and rosemary in a little oil. As soon as the bacon is golden brown, add the garlic, shallots and dates and fry for 5-10 minutes. Then stir in the tomato purée and fry for approx. 3 mins.
Then add the remaining ingredients and simmer over a low heat for approx. 20 mins.
Remove the thyme and rosemary and blend the mixture with a hand blender for 10 mins. until smooth.

3 Tå Garlic, 2 stykk Shallots, 5 stykk Dates, 100 G Bacon, 2 Gren Thyme, 2 Gren Rosemary, 1 Spiseskje Sunflower oil, 2 Spiseskje Tomato purée, 250 G Tomato sauce, 30 G Soy sauce, 2 Spiseskje Maple syrup, 0,5 stykk Chilli pepper, 0,5 Teskje Ginger (ground), 1 Teskje Smoked salt, 1 Teskje Cajun spice, 1 Klype Pepper (ground)
Preheat the oven to 220°C fan oven.
Line a baking tray with baking paper.
Drain the water from the sweet potatoes, place the slices on a cloth and dry well. Turn the slices in starch.
Mix the oil, agave syrup and spices in a bowl and marinate the sweet potatoes in the mixture.

30 G Rice starch, 2 Spiseskje Sunflower oil, 0,5 Teskje Paprika powder (smoked), 1 Spiseskje Maple syrup, 20 G Sea salt, 1 Klype Cayenne pepper, 0,5 Teskje paprika (sweet), 1 Klype Cumin, 1 Klype Garlic granules
Place the wedges next to each other on a baking tray and place in the oven for approx. 30–35 minutes.
Knead the mince well and shape into four 200 g patties.
The patties should be slightly larger than the bagels, as they will shrink during frying.
Heat a pan with oil and fry the patties for approx. 5 mins. on each side.

In the same pan, toast the sliced bagels cut side down in the residual heat on both sides.
Wash the tomato, remove the stem and cut into four slices of equal thickness.
Wash the rocket and shake dry. Cut the gherkins into slices of the same thickness.

4 stykk Bagels, 1 stykk Oxheart tomato, 50 G Rocket, 2 stykk Gherkins
Layer the burgers: Spread some barbecue sauce on the bottom half of the bagel, then place the meat patty, cheese, tomato and cucumber slices and rocket on top. Cover with the top half of the bagel
Serve with the sweet potato wedges and enjoy.
