Bagel burgers

with sweet potato wedges

  • 1 Colher de chá Cajun spice

  • 100 G bacon

  • 4 Unidade bagels

  • 1 Unidade beef tomato

  • 1 Beliscar cayenne pepper

  • 0.5 Unidade chilli pepper

  • 5 Unidade dates

  • 3 Dedo do pé garlic

  • 1 Beliscar garlic granules

  • 2 Unidade gherkins

  • 1 Beliscar ground cumin

  • 0.5 Colher de chá ground ginger

  • 1 Beliscar ground pepper

  • 3 Colher de sopa maple syrup

  • 800 G minced beef

  • 4 Disco mountain cheese

  • 30 G rice starch

  • 50 G rocket

  • 2 Ramo rosemary

  • 20 G sea salt

  • 2 Unidade shallots

  • 0.5 Colher de chá smoked paprika

  • 1 Colher de chá smoked salt

  • 30 G soy sauce

  • 4 Colher de sopa sunflower oil

  • 0.5 Colher de chá sweet paprika

  • 500 G sweet potatoes

  • 2 Ramo thyme

  • 2 Colher de sopa tomato purée

  • 250 G tomato sauce

Preparação

  • Prepare the sweet potato wedges

    Peel the sweet potatoes, cut into wedges and soak in cold water for about 1 hour.

  • Ingredientes

  • Make the barbecue sauce

    Peel the garlic and shallots and roughly chop together with the dates.

    Dice the bacon and fry in a pan in a little oil with the thyme and rosemary. As soon as the bacon is golden brown, add the garlic, shallots and dates and fry for 5 to 10 minutes. Then stir in the tomato purée and toast for about 3 minutes.

    Then add the remaining ingredients and simmer over a low heat for about 20 minutes.

    Remove the thyme and rosemary and blend the mixture with a hand blender for 10 minutes until smooth.

  • Preheat the oven

    Preheat the oven to 220 °C (fan-assisted).

     

    Line a baking tray with baking paper.

  • Marinate the sweet potato wedges

    Drain the water from the sweet potatoes, place them on a tea towel and dry well. Coat the wedges in rice starch.

    Mix the oil, agave syrup and spices in a bowl and marinate the sweet potatoes in the mixture.

  • 30 G rice starch, 2 Colher de sopa sunflower oil, 0,5 Colher de chá smoked paprika, 1 Colher de sopa maple syrup, 20 G sea salt, 1 Beliscar cayenne pepper, 0,5 Colher de chá sweet paprika, 1 Beliscar ground cumin, 1 Beliscar garlic granules

  • Bake the sweet potato wedges

    Place the wedges side by side on a baking tray and place in the oven for about 30 to 35 minutes.

  • Make the patties

    Knead the mince well and shape into four 200 g patties.

    The patties should be slightly larger than the bagels, as they will shrink while frying.

    Heat oil in a frying pan and fry the patties for about 5 minutes on each side.

  • Ingredientes

  • Prepare the remaining ingredients

    In the same pan, use the residual heat to toast the sliced bagels cut side down.

    Wash the tomato, remove the stem and cut into four slices of equal thickness.

    Wash the rocket and shake dry. Evenly slice the gherkins.

  • 4 Unidade bagels, 1 Unidade beef tomato, 50 G rocket, 2 Unidade gherkins

  • Finishing touches

    Layer the burgers: spread some barbecue sauce on the bottom half of the bagel, then place the meat patty, cheese, tomato and gherkin slices and rocket on top. Cover with the top half of the bagel.

    Serve with the sweet potato wedges and enjoy.
