Grilled kohlrabi with wasabi mayonnaise

  • 6 level tbsp Fresh or frozen peas

  • 2 units Kohlrabi (approx. 300 g each)

  • 3 tbsp Vegan mayonnaise

  • 1 level tbsp Wasabi paste

Method

  • Diced kohlrabi

    Peel the kohlrabi, cut away the stalks generously and cut into cubes about 0.5 cm in size. Fry the kohlrabi cubes in a pan over a medium heat with a little sesame oil until golden brown.

  • Wasabi mayonnaise

    Meanwhile, mix the mayonnaise with the wasabi paste.

  • 3 tbsp Vegan mayonnaise, 1 level tbsp Wasabi paste

  • Add peas

    Add the peas to the kohlrabi and cook for a further 2 mins. Mix the roasted sesame seeds, kohlrabi and peas and season with sea salt.

  • 6 level tbsp Fresh or frozen peas

  • Finishing touches

    To serve, place some of the grilled kohlrabi cubes on each spoon and stagger the peas. Finish with a dollop of wasabi mayonnaise using a piping bag, garnish with shiso cress and a squeeze of lemon juice.
