Heat the flour, water, and milk in a saucepan over medium heat, stirring until a paste forms.

Heat the milk gently in a saucepan over low heat and dissolve the yeast in it. Let the butter soften.
In a mixing bowl, combine the flour with salt and sugar, then add the milk-yeast mixture and the pre-dough and knead well.
Separate half of the eggs and store the egg whites in the refrigerator for other recipes.
Add the whole eggs and the egg yolks to the dough and knead until a smooth dough forms. Then gradually incorporate the softened butter until the dough is smooth and elastic.

Remove the dough, shape it into a ball and place it in a bowl. Put the bowl on the oven rack and slide it into the middle position.
Start the special program “dough proving” at 35°C and let the dough rise for 45 minutes.
Divide the dough into four equal-sized pieces and shape into balls.
Place the balls on the universal tray. Start the special programme “Prove dough” at 40°C and leave the dough to prove again for 45 minutes.
Start the “Brioche burger bun” programme and follow the steps.
Whisk the milk with the egg and brush the dough pieces with it.
As soon as the BORA X BO is preheated, place the food in the oven in the middle position.
