Sesame and salmon sashimi

with mushy peas

Ingredients

  • 2 tbsp black sesame

  • 400 ml coconut milk

  • 5 sprig coriander

  • 2 tbsp groundnut oil

  • 600 g peas

  • 500 g salmon

  • 1 tsp sea salt

  • 1 tbsp soy sauce

  • 1 pinch wasabi

  • 2 tbsp white sesame

Method

  • Make the pea mash

    Wash the coriander, shake dry and chop finely.

    Cook the peas in boiling salted water for 1 or 2 minutes, then immediately rinse in iced water. Roughly purée the peas with the other ingredients in a tall container.

  • Ingredients

  • 5 sprig coriander, 1 tsp sea salt, 600 g peas, 400 ml coconut milk, 1 pinch wasabi, 1 tbsp soy sauce

  • Fry the salmon

    Heat the oil in a frying pan and swirl it around.

    Mix the sesame seeds. Coat the salmon with the sesame seeds and fry all over for 15 seconds.

  • Ingredients

  • 2 tbsp groundnut oil, 500 g salmon, 2 tbsp black sesame, 2 tbsp white sesame

  • Finishing touches

    Plate up the mushy peas.

     

    Slice the fried salmon and place on top of the peas.
