Barbecuing in the oven - the year-round barbecue

As we all know, there's no such thing as bad weather - not even for barbecues. Even when icy winds and rain make outdoor barbecues uncomfortable, you can still enjoy juicy meat and crunchy grilled vegetables. The highlight: You grill in the oven - and enjoy perfect convenience and full control over the food. 

Almost any oven is suitable for grilling. Ideally, it has a grill function, top and bottom heat for roasting flavours and a convection or hot air function. A fan distributes the heat evenly throughout the interior. The consequences: shorter cooking times at a lower temperature

    Tip for connoisseurs: You can create roasting flavours by high temperatures at the end of the cooking time. Smoked salt or a few drops of liquid smoke provide a subtle barbecue flavour

      Step by step: How to grill in the oven

      Whether vegetables, fish or meat - this is how you get perfect grilled food from the oven:

      • Preheat - Preheat the oven including grid/grill pan and tray to the desired temperature. 

       

      • Prepare the food - Season or marinate the food and place it on the grill/grill pan. 

       

      • Cook gently - Cook large pieces of meat and vegetables in particular at moderate heat in convection or hot air mode first. 

       

      • Create roasting flavours - Set the temperature to full level for the last ten to 20 minutes. This creates the roasted flavours. 

       

      • Leave to rest - At the end of the cooking time, leave the meat to rest with the oven door slightly open for eight to ten minutes.

        Tips for practice: The optimum temperature and grilling time

        Cooking steaming, aromatic aubergines in the oven, grilling courgettes, firing up the oven for a juicy steak or preparing salmon in the oven - classic grilled food and veggie dishes are just as successful in the oven.         Good to know: The cooking times of vegetables vary greatly. While you grill peppers and broccoli florets for around 15 minutes, aubergines need around 40 minutes in the oven. 

         

        Please note that the cooking times with the BORA X BO are different and differ from the cooking times specified above. When cooking with the X BO, the temperature is transferred to the food more quickly as the steam oven circulates the hot air at high speed. The food is cooked more gently at lower temperatures and is on the plate more quickly. 

          FAQ about grilling in the oven

          An oven with a grill function usually has heating coils in the upper part of the interior. They generate high heat and transfer it directly to the food to be grilled. This creates roasted flavours and the typical crust.

          If your oven has a grill function, this is a suitable addition - the grill function is usually switched on at the end of the cooking time, for example to ensure crispy skin on a roast chicken. Alternatively, select top heat or top and bottom heat. Place the food on a rack so that the air can circulate around the food and it does not burn. A baking tray under the grill catches fat and meat juices.

          First cook gently, then grill over a high heat: Let roasts, knuckle of pork, chicken and co. cook at a moderate temperature first. You can create the typical roasted flavours in the last ten to 20 minutes with maximum heat.

          Top and bottom heat ensures even browning and a crispy crust. The function is ideal for small grilled food and mini-quantities, for gratinating and when grilling vegetables in the oven. Grilling in the oven with convection is ideal for large pieces of meat and several portions. Regardless of whether you grill with top or bottom heat: If your oven has a grill function, you can use it in a targeted manner..

          Depending on the quantity, thickness and desired cooking level, grill meat for between around five minutes (thin steaks) and 90 minutes (roast beef or whole chickens).

          The temperature, cooking time and accessories should be right for grilling in the oven. Always place the food to be grilled on aen rack. The thinner the meat, the shorter the cooking time. Important: For perfect results, the meat should be at room temperature.
