1 tsp Rapeseed oil
1 level tsp Salt
100 ml Water
70 g Wheat flour (type 405)
1 piece Yeast
1 piece egg
15 g sugar
Place the flour, water and 1/3 of the yeast in a bowl and knead into a dough.
Cover and chill the pre-dough for 24 hours.

Mix the flour with the salt in a mixing bowl, add the water and knead.
Cover with a damp cloth and leave to soak for 30 minutes.
Separate the egg yolk. Knead the egg yolk together with the remaining ingredients, the pre-dough and the remaining yeast to form a smooth dough.
Keep the egg white in the fridge for future recipes.

Start the special programme "Rise dough" at 35°C and leave the dough to rise for 30 minutes.
Divide the dough into four equal pieces and shape into balls.
Place the balls on the universal tray. Start the special programme "Rise dough" again at 40°C and leave the dough to rise for 45 minutes.
Start the "Brioche Burger Bun" automatic programme and follow the programme sequence. You will receive a push notification as soon as a step is performed in the BORA X BO and confirm this at the relevant time.
Heat the milk and brush the brioche burger buns with it.
As soon as the BORA X BO has heated up, place the food in the centre.
