
70 g clarified butter
3 piece eggs
60 g flour
2 tsp paprika (sweet)
4 pinch pepper (ground)
0.5 tsp salt
150 g spelt breadcrumbs
600 g turkey breast
Mix together the spelt breadcrumbs and paprika.
Put the breadcrumb mixture, flour and eggs in three separate, deep plates. Lightly beat the eggs with a fork.

Cut the turkey into equal-sized slices. Flatten the meat evenly using a tenderiser, season on both sides with salt and pepper and drizzle some water on top.
Coat the meat slices in flour, one after the other, then dip them into the beaten eggs, allowing any excess egg to drip off briefly.
Next, coat them in the breadcrumb mixture, pressing it on lightly.

Start the “Turkey escalopes” programme and follow the steps.
Melt the clarified butter in a pan over a low heat.
Place the escalopes on the universal tray and brush both sides with the melted clarified butter.
Once the BORA X BO has heated up, put the food in the middle of the oven.
When notified, turn the food over and finish cooking.
