100 g clarified butter

150 g spelt breadcrumbs
600 g turkey breast
Mix the spelt breadcrumbs and paprika powder.
Pour the breadcrumb mixture, flour and eggs into three separate, deep plates. Lightly beat the eggs with a fork.

Cut the turkey into equal slices, flatten evenly with a meat mallet, season with salt and pepper on both sides and sprinkle with a little water.
Turn the pieces of meat in the flour one by one, dip in the egg mixture and leave to drain briefly.
Then dredge in the breadcrumb mixture and press down lightly.

Start the "Turkey schnitzel" programme and follow the procedure.
Melt the clarified butter in a pan over a low heat.
Place the schnitzel on the universal tray and brush both sides with the melted clarified butter.
