X BO automatic programme butter cake

Preparation

Prepare the dough 

Heat up the milk in a pan over a very low heat. Meanwhile, put the other ingredients in the mixing bowl of your food processor, add the milk and knead into a smooth dough. Leave to rise in the X BO (35°C/40% humidity, special programme “Prove dough”) for 1 hour. Using a rolling pin, roll out the dough evenly to the size of the universal tray and leave to prove in the X BO for another 15 minutes.  

 

Prepare the topping 

Melt the butter in a pan then fold in the sugar and sliced almonds. Remove the dough from the X BO and carefully brush it with the almond and butter mixture. 

 

Bake the cake 

Bake the cake in the X BO (150°C/20% humidity, automatic programme “Butter cake”) for 25 minutes. Remove the cake from the oven and pour the liquid cream over it while it is still warm.  

 

Pro tip 

To achieve perfectly airy, crusty baked goods, use the special programme “Prove dough” after making the dough. To vary the recipe and make the cake even moister, different fruits can be added to the dough before baking.

For the dough 

  • 200 g milk 
  • 500 g wheat flour (type 405 or 550) 
  • 42 g yeast (1 cube) 
  • 70 g sugar 
  • 1 tsp vanilla sugar 
  • ½ tsp salt 
  • 100 g butter (room temp.) 
  • 1 egg (size M) 

For the topping 

  • 150 g butter 
  • 50 g sugar 
  • 200 g sliced almonds 
  • 150 g cream
