Preparation

Prepare the rice 

Put the rice in a sieve and rinse thoroughly with cold running water. Cut the vanilla pod lengthwise and remove the seeds with the back of a knife. Put all of the ingredients in the oven dish with the vanilla seeds and a pinch of salt and mix well. 

 

Cook the rice pudding 

Cook the rice pudding in the X BO (130°C/80% humidity, automatic programme “Rice pudding”) in 3 stages: first for 23 minutes, then for 22 minutes, then for another 10 minutes. Between each cooking stage, stir the rice well then remove it from the X BO and stir it vigorously once again for around 2 minutes. 

 

Pro tip 

Before cooking the rice, rinse with cold water until the water runs clear. Spread the rice out on the tray and add milk. To vary the recipe or to make it suitable for vegans, plant-based alternatives such as almond milk can be used instead of dairy milk or cream.

  • 1400 ml milk (3.5% fat) 
  • 85 g raw cane sugar  
  • 1 vanilla pod   
  • Salt
