Black rice noodles with prawns, edamame and lime sauce

Bring a pan of salted water to the boil and cook the noodles for three minutes. While the noodles are cooking, heat up some cooking oil in a frying pan and add the prawns. Season with salt and pepper. Add the edamame beans and lime juice to the prawns and melt in the butter while stirring. When the three minutes are up, transfer the noodles to the frying pan. Mix the ingredients thoroughly before serving.

  • 200 g black rice noodles
  • 200 g prawns
  • 50 g edamame beans (shelled)
  • 3 tbsp lime juice
  • 40 g cold butter
  • cooking oil
  • natural or sea salt
  • ground pepper
