Preparação

COOK THE ARTICHOKES: 

Squeeze the lemon and pour the juice into a large bowl of water. Remove the stalk of the artichokes, the outer leaves and the pointy tips, then put the artichokes in the bowl so that they don’t tarnish. Spread out the artichokes evenly on the perforated tray and cook them in the pre-heated BORA X BO for 40 minutes (98°C/100% humidity).  

  

PPRPARE THE VINAIGRETTE: 

Wash the lemon in hot water and dry it. Finely zest the peel and squeeze out the juice. Wash the chilli pepper, remove the stalk base, white ribs and seeds then finely chop the remaining pepper. Peel the garlic clove and finely slice one half of it. Wash the herbs, shake them dry, pluck the leaves and needles and finely chop them. Put all of the ingredients and seasoning (except the oil) in a bowl and mix together. Slowly pour in the oil, stirring constantly, until the mixture is smooth. Pour the vinaigrette over the artichokes while they are still warm, to marinate them.

Baking/cooking time: 40 min.

ARTICHOKES: 

  • 8 artichokes  
  • 1 organic lemon  
  • 1 bowl of water  

 

VINAIGRETTE:

  • 1 organic lemon  
  • ¼ chilli pepper  
  • ½ garlic clove 
  • 1 sprig of rosemary 
  • 3 sprigs of thyme  
  • 2 sprigs of flat-leaf parsley  
  • Salt 
  • Ground pepper  
  • 1 tsp honey  
  • 20 ml water 
  • 10 ml herb vinegar  
  • 25 ml olive oil
