Baked potatoes with bacon and herb quark

Automatic programme “Baked potatoes”


Prepare the potatoes

Wash the potatoes and put them on the X BO universal tray. Sprinkle with coarse salt and insert the tray into the X BO. Select the automatic programme "Baked potatoes" and follow the instructions on the display.


Prepare the quark dip

In the meantime, wash the herbs, shake them dry and finely chop them. Put them in a bowl together with the quark, 1 tbsp olive oil, salt and pepper and mix well. Refrigerate until ready to serve.


Make the herb oil

Wash the parsley and shake it dry. Then finely chop it and put it in a chopper with the olive oil. Afterwards, strain the oil through a fine tea towel.


Cook the bacon

Put the bacon slices on the X BO universal tray and cook at 200°C/-80% humidity for 5 minutes.


Finishing touches

Remove the potatoes from the oven, make an incision in the middle and put one potato on each plate. Put a spoonful of herb quark in the middle of each potato, top with bacon and drizzle with herb oil.


Pro tip:

If you wish, you could also dice a garlic clove and half a red onion and stir them into the quark mixture. Garnish this variant with fried garlic slices and fresh herbs.

Ingredients for 4 people:

  • 4 potatoes (170 g each)
  • 20 g salt (coarse)
  • 365 g quark
  • ½ bunch of parsley
  • 1 bunch chives
  • Ground black pepper
  • A pinch of salt
  • 1 tbsp olive oil
  • 4 slices of bacon

For the herb oil:

  • ½ bunch of parsley
  • 100 ml olive oil

To serve:

  • Fresh herbs (according to season)
