Wholemeal protein pancakes with banana and maple syrup

Whisk the banana, egg, maple syrup and oat milk together in a mediumsized bowl. Sieve and stir in the flour, baking powder, protein powder and a pinch of salt until well combined. Leave to rest for 15 minutes. Heat the oil in a large frying pan over a medium heat, add approx. 65 g of pancake mix and cook with the lid on for 3 to 4 minutes until bubbles form. Then turn over and cook for another 2 to 3 minutes until golden brown. Repeat the process with rest of the pancake mix. Chopped walnuts, fresh fruit or a dash of maple syrup are the perfect addition.

Serves two

  • 1 ripe banana, lightly mashed
  • 1 egg at room temperature
  • 1 tbsp maple syrup
  • 125 ml almond milk
  • 190 g wholemeal flour
  • 1 ½ tsp baking powder
  • 1 tbsp vanilla protein powder
  • natural or sea salt
  • 1–2 tbsp coconut oil
