Prepare the rice 

Put the rice in a sieve and rinse thoroughly with cold running water. Cut the vanilla pod lengthwise and remove the seeds with the back of a knife. Put all of the ingredients in the oven dish with the vanilla seeds and a pinch of salt and mix well. 

 

Cook the rice pudding 

Cook the rice pudding in the X BO (130°C/80% humidity, automatic programme “Rice pudding”) in 3 stages: first for 23 minutes, then for 22 minutes, then for another 5 minutes. Between each cooking stage, stir the rice well then remove it from the X BO and stir it vigorously once again for around 2 minutes. 

 

Pro tip 

To vary the recipe or to make it suitable for vegans, plant-based alternatives such as almond milk can be used instead of dairy milk or cream.

  • 300 g pudding rice  
  • 1400 ml milk (3.5% fat) 
  • 85 g raw cane sugar  
  • 1 vanilla pod   
  • Salt
