Grilled calamari

Preparation

Wash the calamari and grill for a minute in the very hot groundnut oil. Make a mayonnaise out of the egg yolk, vegetable oil and mustard, then fold in the wasabi (powder or paste). Make a marinade out of the remaining ingredients then baste the hot calamari with it and season with salt and pepper to taste.

  • 600 g calamari
  • 2 tbsp lime juice
  • ½ bunch of coriander (chopped)
  • ½ red chilli pepper
  • 1 tbsp fish sauce
  • 1 tbsp soy sauce
  • 3 spring onions (finely sliced)
  • 2 tbsp groundnut oil for searing
  • 3 lime leaves (finely chopped)
  • 1 egg
  • 200 ml vegetable oil
  • 1 pinch mustard
  • 1 pinch wasabi
