#5 Udon noodle salad

Cook the rice noodles. Sear the mince and garlic then briefly add the shrimps. Chop the spring onions and coriander. Make a marinade out of the remaining ingredients and mix everything together. Sprinkle with chopped peanuts and season to taste.

  • 150 g mince
  • 100 g shrimps
  • 4 spring onions
  • 1 red chilli pepper (finely chopped)
  • 6 cocktail tomatoes (quartered)
  • 4 tbsp lime juice
  • 1 garlic clove (finely chopped)
  • 2 mint stems
  • 1 tbsp soy sauce
  • 1 small bunch of coriander (finely chopped)
  • 2 tsp sesame oil
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 50 g peanuts (coarsely chopped)
